Calvados Coquerel Fine

Normandy has been famous for its apples for thousands of years. One myth from the ancient Gauls claimed that Venus sowed the seeds of the first apple orchards in the region. Calvados is believed to date back to the 16th century when distillers of wine began experimenting with cider, the traditional drink of Normandy. Then in 1588, a ship from the Spanish Armada ran aground in Normandy. It's name, "El Calvador" became the namesake for this fine product. Located near the timeless Mont Saint Michel, Domaine du Coquerel was founded in 1937. It takes over 13 pounds of apples to make a 750 milliliter bottle of Calvados Coquerel. It is the #2 Calvados in the world. Coquerel Fine is a blend of calvados aged a minimum of 3 years. It makes a fine aperitif, digestif, and is also an excellent ingredient for cocktails.

¾ ounce of Cognac Francet ¾ ounce of Calvados Coquerel ½ ounce of orange liqueur Dash of licorice liqueur Stir and serve in a martini glass.

Calvados Gravy

PREP: 15 MINS - TOTAL TIME: 45 MINS YIELD: Makes 4 cups INGREDIENTS 1/2 cup Calvados Coquerel Fine Reserved roasting pan with turkey drippings, neck, and giblet 4 1/2 cups Turkey Stock 1/4 cup plus 2 tablespoons all-purpose flour 2 tablespoons unsalted butter DIRECTIONS: STEP 1 Strain drippings from roasting pan through a sieve, and press to extract liquids; reserve pan. (Shred neck meat and chop giblets if making giblet version, step 4; otherwise, discard.) Pour drippings into a glass measuring cup or a fat separator. Let stand until separated, about 10 minutes. Pour off fat. STEP 2 Place pan on stove across 2 burners. Add Calvados Coquerel. Bring to a simmer over medium-high heat. Cook, scraping up brown bits and stirring constantly with a wooden spoon, for 2 minutes. Add reserved drippings and 4 cups stock; bring to a simmer. STEP 3 Meanwhile, whisk together remaining 1/2 cup stock and the flour until smooth. Slowly whisk stock-flour mixture into pan. Simmer until gravy is reduced by half and coats the back of a spoon, 10 to 12 minutes. STEP 4 Remove from heat. Add butter, and swirl pan until butter melts. Strain gravy through a fine sieve; discard solids. Return shredded meat and chopped giblets to gravy if desired. Serve immediately or keep warm over low heat. The Normandy

9 fresh cranberries 2 thin slices green apple 1 teaspoon packed dark brown sugar 1 tablespoon lemon juice 1 tablespoon simple syrup 1⁄4 cup good-quality Calvados Ice cubes DIRECTIONS 1. In a cocktail shaker, muddle 6 cranberries, 1 apple slice, the brown sugar and lemon juice. 2. Add the simple syrup, Calvados and a few ice cubes. Cover, shake well and strain into a rocks glass filled with ice. Top with the remaining apple slice and 3 cranberries.

Cocktail Normand *compliments of General Manager Brad Histand of Bistrot La Minette 623 6th St. Philadelphia PA 19147 1 ½ oz Calvados Coquerel FINE 1 ½ oz Pear Puree ½ oz of Sparkling Normandy Cider ¼ oz Simple Syrup Dash of Cinnamon as garnish Shake and pour into martini glass.
